Our fragrantly charming Sri Lankan Coconut and cashew chicken
- WHAT YOU NEED:
- 1Kg diced chicken, lamb, beef, seafood or vegetables, 500g/2 cups basmati rice, optional 150ml natural yoghurt
- COOKING INSTRUCTIONS
- 1.Seal meat or vegetables in a hot oiled sauce pan
- 2.Add the simmer sauce and stir until bubbling
- 3. turn heat down to low and simmer until meat or vegetables are tender(20 mins for veg or chicken, longer for red meat)
- 4. Serve with steamed basmati rice
- OUR TIP: For a truly meal cook chicken pieces legs with sauce and serve with coconut sambal(mix lime, salt, chili flakes(optional) and desiccated coconut that had been soaked in warm water.)
